Lets get down to cooking.
This is not food cooked on a gas grill this is indirect heat low and slow oak wood smoked food. Ribs are
St Louis style dry rubbed with our own special blend of spices. Chicken is slow smoked with hand rubbed
spices. Brisket has a wet rub applied 24 hours in advance. Pulled pork is dry rubbed then after cooking it
is pulled with your choice of sauce: vinegar, tomato, or mustard. It will be food to remember this is nothing
like you ever had before. Food can be cooked onsite or delivered hot ready to eat. We also do maple
flavored whole hogs in the in the smoker up 100 lb.
First we take food safety very serious and will not compromise on quality preparation or cooking times.
We never rush food off the grill. If it’s not done to perfection we don’t serve it. If the food sits out to long it
will be discarded, you and your guests safety and satisfaction come first.
The food can be cooked at your location in my large smoker it takes 6-13 hrs cooking time depending
on your menu. The food will be served buffet style in heated chafing dishes all food will be monitored for
correct temperatures. The menu as noted will provide enough food for a hearty eater.
For onsite cooking, the day of your event we will arrive several hours prior to the start cooking. We will
deliver the smoker the day before your party or the day of to set up an area for cooking. The smoker
weights just over 5000 lbs. on own trailer.
We will supply disposable plates, napkins, utensils, bowls and tables for serving the food.
We will stay 3hrs after agreed time for serving food or until everyone has been served. This is for holding
food hot in the grill for the duration of your party afterwards any leftovers will need to be cooled and
promptly refrigerated.
Note: Brisket and pulled pork takes 12 hrs to cook it’s recommended that brisket and pulled pork be
used for later parties preferably after 5:00 pm (there is a $120 up charge for brisket and pulled pork
due to longer cooking and preparation time.)
We have served many events of groups of 50-120 people.
All have had an exceptional experience smelling their food cooked in the smoker There’s nothing like
smelling and seeing your food cooked before your eyes and knowing it’s fresh off the cooker.
